A few notes:
- Use a small amount of cucumber (1 inch round)
- The softer the fruit, the sweeter it will taste
- Use flax flakes, if mixer won't crush seeds
- Only about 8 cashews, and a teaspoon of flax
- Use fresh or canned beetroot - grate first, if using fresh
- Fill a third with kombuch (or fruit juice) and the rest with water
- Blend for a minute, or until smooth - I use a Nutri-Ninja
Variation: add a sprig of fresh coriander leaves, to highlight the cucumber flavour.

ReplyDeleteThe recipes that came with my Nutri Ninja were limited. There are some great books you can get from the library however, with a wider range of recipes. We like to experiment, so that's how this recipe came along. Using what we have.
DeleteI really like your addition of cucumber and beetroot. Not real keen flax flavor though, so maybe I'd freeze the strawberries and add them frozen. :)
ReplyDeleteIt's interesting, because I cannot really taste the flax. That's what I love about smoothies, the flavours merge together to create something entirely new. :)
DeleteI use frozen mixed berries, when I don't have fresh available. Although in winter, I prefer the fresh. ;)
This looks delicious and I think I have everythinh on hand to try it. Love using beetroot in my smoothies but our canned ones have no nutrients on them so I don't eat it canned. I need mega nutrients. Another favorite combination is cilantro with strawberries and coconut milk- the kind in a can. I dilute with water otherwise its too rich.
ReplyDeleteThat smoothie sounds great with the cilantro and coconut milk. I'm going to have to update this post, because you reminded me, we use about a third of kombucha too. So it's not all water. That little bit of sweetened tea, is brilliant. But you wouldn't want it ALL kombucha. Because like the coconut milk, it's too sweet and rich.
DeleteI'd love to report one day that I enjoy kombucha. Is your home made one better than a store bought? Thats all I've ever tried.
DeleteI've only ever had the home grown. I've probably tried a store bought, unconsciously, as I have a vague recollection of having tasted something similar before. But what I love about home made kombucha, is how you can flavour it to your liking. The second ferment, is where it all happens. We like ginger root, lime zest, dried sultanas and apricots, added to the bottle. So so refreshing.
