DeleteChris thank you for sharing your knowledge of the alchemy of the sourdough process. I currently have two baton loaves that I have flavoured with cashew, pepper and lime, on the rise. I am determined that today I will have success. With the weather being so warm I am having to keep an eye on the dough. The difference between the prove and over proofed is a matter of minutes.

DeleteThanks for a great workshop Chris. I've just put my loaf in the oven to cook so am hoping it will be ok. It didn't rise as high as yours on Saturday but I will persevere. Maybe more kneading...

DeleteFailure to rise can mean the starter isn't active enough, or your temps may not have been warm enough. Sometimes you just have to wait an extra half hour to an hour, to see if it grows on that last rise.
